Getting Here Grounds Tour

With 10 years of experience working in the event industry for Fairmont Hotels and Hyatt Hotels and Resorts, Liv found her home at Alderbrook Resort & Spa. She grew up in the Olympia area and graduated from Washington State University with a degree in Hospitality Business Management. Liv fell in love with Alderbrook when she and her husband married at the property in 2015, and joined our team shortly after. She is currently pursuing an MBA with a focus in Hospitality Management at Washington State University and enjoys cooking, wine and traveling with her husband and family.

Revel in the serenity of moonlit yoga on the shores of Hood Canal in a class led by local Yogini, Michelle Pugh, of Joonbug Yoga. Fiddlehead Ferns are available for foraging towards the end of February through March and April around our resort along our hiking trails.

-Great for garnishing fish dishes that you want a little more of a earthy presence on the plate-

Garnishes 4 plates

12 ea fiddle heads, about a quarter in diameter is best and wash them in cool running water for 30-45 seconds.
3 crabs fish sauce or soy sauce
Tempura batter:
½ cup Corn Starch
1 Cup AP Flour
½ tsp white pepper ground
1 tsp Salt
2 egg whites
2 ½ cups soda water
1 cup ice
Mix well if a little thin add a little flour, too thick add more ice (it will melt during mixing while keeping it cold)

Dust rinsed fiddle heads in a little corn starch, then dunk into your tempura batter.

Fryer should be at 375f and the oil has to be perfectly clean. Add the battered ferns one at a time and make sure to keep them from touching during the cooking process. Turn over after 45 seconds of cooking and cook for another 20-30 seconds. Remove from oil and season with a little Maldon sea salt and a couple drops of the 3 crabs fish sauce or drops of soy sauce of your preference. Garnish accordingly around your dish, 3 per plate, for 4 plates.

We’re pleased to announce that our 77 guest rooms will undergo a refresh in 2018.  Updates will include paint colors, linens, carpets, upholstery, technology, lighting and storage.  GGLO Design created this concept for our property. 

Our initial phase of the property refresh is slated to be complete by the end of February 2018.  The guest room and group experience will not be disrupted by these updates.  

Future updates to the property will include our cottages, lobby, restaurant and spa.  Please follow us for more details on our property refresh. 

A Hood Canal native, Dallas Miller renders confections in canal kitchens such as the Union City Market and Alderbrook Resort & Spa.  Dallas contributes to a creative collective of women focused on showcasing Hood Canal’s bounty and beauty. Purchase handmade confections at Union City Market.

Fir & Honey Lollipops

Fir Tip Water
1 cup Fir tips
2 cups water

Instructions
Wash the fir tips and combine with the water in a saucepan. Heat until the water is just about to boil and turn off heat. Cover the saucepan with a lid and let steep until cool.

Once the water is cool, strain out the fir tips. The fir water can be stored covered in the refrigerator for up to one week.

Fir and Honey Lollipops
2 cups sugar
½ cup honey
½ cup light corn syrup
¼ cup fir tip water

Prepare silicone lollipop molds by inserting the lollipop sticks half way into the mold, no cooking spray is necessary. A silicone baking mat can also be used instead. Putting the molds on a baking pan makes them easy to move as they are cooling.

Combine the sugar, honey, light corn syrup, and fir tip water in a heavy bottom saucepan. Be sure not to stir the sugar mixture once it has started cooking, and wipe down any sugar crystals that stick to the side with a wet cooking brush. Insert a candy thermometer and cook until the sugar mixture until it reaches 300°F.

Once the sugar mixture has reached 300°F, remove it from the heat and carefully pour into the silicone molds. The hot sugar mixture should cover above the lollipop stick. After filling half of the molds, rotate the lollipop sticks to ensure they are fully covered. If using a silicone baking mat, pour circles about 1-inch in diameter. Place lollipop sticks into circles once half the sugar mixture has been poured and rotate.

Let the lollipops cool and dry, then wrap individually in packaging.

Kristin brings 20 plus years of experience in the hospitality industry with extensive work with the public in Hotel operations and sales positions. Formerly with Westcoast Hotels, Kristin managed multiple departments in an open, positive and rewarding manner as a leader and educator. Joining the Alderbrook team in 2005, Kristin offers vision, experience, energy, and professionalism to exceed the guests’ expectations for successful and memorable stays in planning special events as a Sales Manager for the Resort. Originally from the Hood Canal area, her involvement with local area organizations and beyond has not only provided valuable contacts with community leaders, but instills a sense of pride for both herself and the resort in the local community. Kristin resides in Belfair with her family.
